Polish Beet Salad (cold)
3 medium beets
1 tbsp fresh grated horseradish
1/2 small purple onion diced small
1/2 tbsp olive oil
1/2 tbsp sugar
1 tbsp lemon juice
1 tbsp white vinager
Dash of salt
Dash of black pepper
Remove greens from beets (save those for something else)
Boil beets for 20 min, let cool, remove skin & root
Shredded beets into a bowl using a cheese shredder
Add in the remaining ingredients and fold in together making sure the horseradish is well dispersed throughout.
Cover and Chill for at least 2 hours, serve.
